Mango Pancakes - Video Recipe

Add some tropical flavor to your breakfast pancakes with my Mango Pancakes Recipe.


A ripe Mango is super sweet fully ripe. They are quite easy to peel, then just slice off the soft flesh into bite-sizes to add to your fave pancake mix. When they make contact with a hot grill they sweetly caramelize like grilled pineapple (ha, another future pancake recipe!)

Mangos are ripe when soft to the touch, kinda like an avocado. I have gotten Mango that goes from green to bad on occasion, sometimes they will not ripen right...oh well. But when they do they have the best flavor.


I peel a Mango by just slicing into the skin, top to bottom about 4 slices per Mango. That is usually enough to then peel each segment of skin to reveal the orange flesh underneath. Then you just slice off the flesh until you hit the large flat/oval seed.

Living in L.A. Mango are easy to get and cheap, too. I get mine at my local Latin grocery store, Superior Grocers.




For the pancake batter, I use a commercial brand. If you have a homemade recipe then use it. I can get a large box of dry pancake batter at my local 99c only Store or Dollar Tree. Regular grocery stores sell it cheap enough, too.

Ingredients (2 servings, using a pancake mix)
  • 1 cup pancake mix - any favorite
  • 3/4 cup water - okay to use milk for a richer pancake batter.
  • 1 mango - roughly sliced or chopped. Depending on the size, one larger size is plenty. Okay to substitute with any fresh seasonal fruit like: blueberry, peach, apricot, strawberry, and even sliced banana or canned fruit like pineapple.
  • 1 tablespoon of cooking oil - to grease skillet. Add more when needed, depending on how many pancakes you make.
  • Butter and favorite pancake syrup - add as much as you like.

Directions
Prepare pancake batter according to package directions. My pancake mix calls for 1 cup of flour and 3/4 cup of water.


Mix pancake ingredients in a bowl. When mixed it will be like thick country gravy.


Start to heat the pan over a medium/low heat.

Peel Mango and slice off flesh from the seed. I slice into skin top to bottom, 4 slices total. Then loosen the top of a slice and peel off the skin. Sometimes it breaks and sometimes it peels all the way off. I do one half at a time so it's less messy to separate the flesh.



I then slice off the flesh of one side. Then I turn over Mango and slice into skin and remove it. Finally slicing off the rest of the flesh.

Mix sliced Mango into pancake batter. Sometimes I will lay out the mango slices directly on the hot pan and pour pancake batter over the slices. It's okay to just mix in the Mango into the pancake batter.


Add oil to pancake pan and pour on the pancake batter with Mango pieces. Brown each side of the pancake. Mine took about 3 minutes for each side. It really depends how hot your pan gets.


The box directions above mentions cooking time to brown each side as 1.5 minutes each....hmmmm, they must be using a super hot pan!


If you want a dark brown pancake presentation, then just cook one side to get the right amount of brown, then cook the other side for a minute, to finish. Serve browned side up, on the plate.

I serve hot with melted butter and favorite pancake syrup.

Cherry Pancakes - Video Recipe

It's cherry season in California and now is the time to get them cheap. They come on sale at my local 99c Only Store and Latin market for, you guessed it, 99 cents per pound. So watch my video below to get a breakfast recipe I think you will enjoy: Cherry Pancakes.

Cherries are notoriously expensive, but for a month or so they come down in price, and I always get a few large bags during the summer season. At first appearance, they are around $2 per pound, but wait a week or two and the price quickly drops.


I like to add them to yogurt or as a mealtime dessert -- I'll also nibble from small bowls throughout the day. They are especially good in pancakes, like almost any seasonal fruit would be. And if cherries are too expensive or hard to get, you can substitute with your own local fruit stand favorites, or even can/jar cherries.


They are a little messy to work with though, so you want to rinse off any surfaces that the cherry juice pools on, and especially clothing or kitchen towels.


It's much easier to just pop one in your mouth and chew around the cherry pit. But for pancakes it's best to slice around the cherry pit and twist cherry halves apart, then dig out the cherry pit. Once you get going it only takes a few minutes to get a cup full for my Cherry Pancake recipe.


A chopstick or plastic straw can push out a cherry pit, too. You can go online to get a special device that pits them as well.

  • 1 cup of pitted and sliced cherries - roughly sliced or chopped. Use any cherry amount that suits your taste. Okay to substitute with any fresh seasonal fruit like: blueberry, peach, apricot, strawberry, and even sliced banana or canned fruit.
  • 1 tablespoon of cooking oil - to grease skillet. I like coconut oil. Add more when needed, depending how many pancakes you make.
  • Butter and favorite pancake syrup - add as much as you like. I sometimes substitute coconut oil for butter.
  • Okay to use vegan pancake batter.


Directions
Prepare pancake batter according to package directions. My pancake mix calls for 1 cup of flour and 3/4 cup of water.



Mix pancake ingredients in a bowl. When mixed it will be like thick country gravy.


Start to heat the pan over a medium/low heat.

Rinse off cherries. Removing the cherry pit is messy, with red juice that will stain clothing or a wood cutting board, so don't wait too long to rinse off any juice that gets onto surfaces or clothing.


I like to slice cherries this way: Cut though to the center of a cherry and rotate slice all the way around and twist cherry apart. One half of the cherry will have the cherry pit. Slice to remove the pit.

You can let the cherry pieces be on the large size.

Mix sliced cherries into pancake batter. Or arrange cherry slices on a hot grill and pour pancake batter over them.


Add oil to pancake pan and pour on the pancake batter. Brown each side of the pancake. Mine took about 2-3 minutes for each side. It really depends how hot your pan gets. Strawberry Pancakes - Video Recipe

However you slice it, strawberries are a great way to start your day. You can be sure I keep my refrigerator stocked come strawberry season. Here in California the harvest is most abundant in the Spring, but with all the greenhouses I can get them almost year-round. If you like like them too, then you've come to the right place for a delish video recipe: Strawberry Pancakes.


If you can get them from a farmers market, or roadside fruit stand, you are indeed fortunate. But even from regular grocery store fruit bins they are sweet and flavorful enough. I get mine from my local Latin market and 99c only Stores, usually in clear plastic 1 pound containers.


I use store-bought dry pancake batter mix that I find at 99c only Stores. You can use any favorite pancake batter.



Strawberries are very delicate. Be sure to turn the containers all around to inspect strawberries for ripeness and a uniform red color. Sometimes they are not fully ripe or even too ripe.


And the fruity pancakes are so simple to make, just trim off the leafy green strawberry caps and slice the juicy fruit; mix up a store bought pancake batter; and fire up the stove top griddle (frying pan).


I like to add the strawberries to the frying pan first then pour on the batter. That way the berries come in direct contact with the hottest part of the pan. The strawberries soften and slightly caramelize to extra sweetness. If you like your strawberries less cooked then just mix them into the pancake batter.

I enjoy fresh strawberries in my morning cereal, mixed into yogurt, and now sliced in pancakes.

  • 1 cup pancake mix - following store-bought pancake mix directions. Okay to use vegan pancake mix too.
  • 3/4 cup water - following store-bought pancake mix directions. Okay to use milk for a richer pancake batter.
  • 1 cup strawberries - roughly sliced or chopped. Use any strawberry amount that suits your taste. Okay to substitute with any fresh seasonal fruit like: cherry, blueberry, peach, apricot, strawberry, and even sliced banana (watch when cooking as bananas burn easily), or canned fruit like pineapple and peaches.
  • 1 tablespoon of cooking oil - to grease skillet. Add more when needed, depending how may pancakes you make.
  • Butter and favorite pancake syrup - add as much as you like. Okay to use butter substitute.


Directions
Prepare pancake batter according to package directions. My pancake mix calls for 1 cup of flour and 3/4 cup of water.


Mix pancake ingredients in a bowl. When mixed it will be like thick country gravy.


Start to heat the pan over a medium heat.

Slice or roughly chop strawberries.


Add oil to pancake pan. I like to add strawberries first so they caramelize when cooking, but okay to just mix strawberries into pancake batter.


Pour on the pancake batter. Brown each side of the pancake. Mine took about 2-3 minutes for each side. It really depends how hot your pan gets. The box directions above mentions cooking time to brown each side as 1.5 minutes each....hmmmm, they must be using a super hot pan!


If you want a dark brown pancake presentation, then just cook one side to get the right amount of brown, then cook the other side for a minute, to finish. Serve browned side up, on the plate.

Serve hot with melted butter and your favorite pancake syrup or topping.
