Fresh Fruit Salad

Cherries are on sale at my local  Latin market for 99 cents per pound! And, they provid the bulk of sweet and tangy produce as well - just read below all the Spanish words of the abundant frutas on sale.

So, now the time is right for my refreshing Fruit Salad. Of course, any seasonal fruit on sale can go into your own citrus salad. I like to mix up crunchy fruit with the soft and juicy.


My fruit salad is minimalist, just whatever fruit I can find on sale. And I give it a generous squeeze of lemon, or lime, to prolong it's freshness, and to cut the sweetness with a little sour.


I always find bananas priced way below a dollar per pound. If you are making a Fruit Salad ahead of time, then don't add sliced banana until you are ready to serve, they turn brown too quickly, even with a lemon or lime bath.


Apples and oranges frequently come on sale. Apples are easy to slice and dice. Oranges can be a little messy, with a slight bitter pith, that separates the skin from flesh. I like to slice off the peel and pith. You could then slice into each orange wedge to cleanly remove the flesh. I don't go that far.


Cherries take the most work, but are worth the trouble. I slice each cherry around the center seed. Twist the cherry halves and expose the seed. Now, it's easier to pluck the seed out. Have a paper towel handy in case juice gets everywhere!


To bulk up a Fruit Salad, add sliced melon or watermelon. If you are from the South, them add some fresh peaches, nectarines, blackberries and strawberries. Northerners get to add some blueberries and all kinds of apple varieties. If you live in breathtaking Hawai'i, add passion fruit, mango,pineapple, lychee nut, papaya and  slivers of fresh coconut.


Whatever the season, keep an eye out for fresh fruit on sale at your local farmers market or roadside fruit stands, then assemble a cheap$kate Fresh Fruit Salad- your way.


Ingredients (2 servings)
  • 1 banana
  • 12-20 cherries
  • 1 apple
  • 1 orange
  • 1 tablespoon lemon or lime juice - can add more or less to your taste.
  • More fruit to add: peach, strawberries, blueberries, blackberries, mango, papaya, pineapple, nectarine, plum, melon, watermelon and grapes.

Directions
For apples, just remove the apple core and stem, then chop.


Cherries are sliced all around the center. You then twist the opposite ends of cherry to expose the seed. Now just pry it out with a knife, small spoon or use your fingers.


I slice an orange in half. Then, slice off the skin and pith to expose the orange flesh. Now just slice of the orange into bite-sizes. Remove any seeds if necessary.


For a banana, peel and slice, but only do it just before serving your Fruit Salad. Bananas do not keep long once the peel is off.


Finally, give the fruit a squeeze of lime or lemon juice. I add about a tablespoon. You can add more or less to suit you own taste.

Fresh Strawberries in Oatmeal - Deal of the Day

Oatmeal is boring and flavorless. Fresh fruit adds color and a light citrus pop to your boring breakfast of oatmeal. It's as fast as scrambling a couple of eggs, but without all the cholesterol. Oatmeal is a great vehicle for fresh fruit including peaches, blueberries and half a chopped apple (with a sprinkle of cinnamon). The Chef picked up a large one-pound crate of fresh strawberries at this 99c only Store yesterday. Strawberries are back! You will not use up all the stawberries with oatmeal, so trim and slice a few for a smoothie the next day. My smoothie recipe is here. Fresh strawberries in oatmeal is a great Deal of the Day.

Instructions (1-2 servings)
About 4 whole strawberries
1 cup oatmeal (if instant follow directions)
1 and 3/4 cups water
Finish with butter, milk and honey (optional)

Directions
Add sliced strawberries and water to oatmeal. Cook at low heat for 5 minutes covered. Serve with a pat of butter and a drizzle of honey & milk.

Wedding Day Cupcakes in W. Hollywood Park - Video Short

In celebration of granting legal marriage licenses for same gender couples in California last week; The 99 Cent Chef baked a cake, and not just any cake but cupcakes. A perfect confection on this happy day for all you same sex romantics is the Chef's celebratory -- Sprinkle Cupcakes with Strawberry Frosting.

My wife recommended recording this historic day; so I hit the 99c only Store to get all the cupcake ingredients for 50 cupcakes. The total price for 50 cupcakes, using 99 cent ingredients, was less than 7 bucks.


The impromptu wedding ceremonies were held in West Hollywood Park. Volunteer ministers/justices officiated the weddings under white lace gazebos, with melodic accompaniment from a roving violinist.

This Chef is not skilled in the confectioners art, but the newlyweds were willing and appreciative to taste my wares.

Another purveyor, Mrs. Beasley's, was passing out pairs of white frosting cupcakes cleverly decorated with same-sex symbols. The Chef decided to challenge Mrs. Beasley's to a "Cupcake Throwdown."

Wedding Day Cupcakes Video

 Ingredients (makes about 12 small cupcakes)
1 Box of Duncan Hines Confetti Cupcakes - 9 ounces

Mix ingredients include:
2 egg whites
3 tblsp. vegetable oil
1/2 cup water (I substituted half and half cream for a richer cupcake -- optional.)

Strawberry Frosting Ingredients
2 fresh strawberries
1 cup of confectioners/powdered sugar (double sugar amount for typically thick frosting)
1/4 stick of butter
Small jar of maraschino cherries

Directions
For the cupcakes follow box directions, including mixing for 2 minutes and baking 20 minutes in a 350 degree pre-heated oven.

I filled cupcake paper cups half way instead of the 3/4 box directions and half-and-half cream is substituted for water -- optional.

Directions for Strawberry Frosting
Blender the strawberries.

With the butter softened at room temperature; add powdered sugar, strawberry puree and butter to a large bowl and whisk until well blended, about 5 minutes.

Refrigerate frosting until cupcakes are baked and cooled down.
Add frosting to cupcakes with a cherry on top.

Strawberry Smoothie


File under 99 Cent Deal of the Day. The Chef picked up one pound packaged fresh strawberries at this 99c only Store yesterday. Let's make a 99 cent smoothie.







They always carry three of the main ingredients the Chef likes to use: soy milk, bananas and yogurt. The Chef usually buys several packages of strawberries to ziplock freeze for the future; just remove green stems and slice in half. They are also selling seedless red grapes which freeze well and add nicely to any smoothie (it's the Chef's sister's secret smoothie ingredient -- thanks, Denise.)



Ingredients
1 cup of strawberries (fresh or frozen)
1 small 6 - 8 oz. yogurt (any flavor, except chocolate!)
1 banana
1 cup soy milk (vanilla or plain)
1/2 cup of grapes (optional)
3 - 6 cubes of ice (optional - if you are using frozen fruit, okay to omit)





Directions

Oh come on, you don't need to read this part --
just throw it all in and blend until smooth. Duh!
