Hot Link Po-Boy Sandwich - Video Recipe

If you can handle the heat,  I've got a killer Po-Boy Sandwich made with a sizzling Hot Link

A Po-Boy is a Cajun-style sandwich using a loaf of French bread plus any cooked meat or seafood. The typical local French Bread has a thin crunchy outer shell and a soft interior. 

A Po-Boy can be filled with any typical sandwich fixings like, sliced tomato, lettuce, and pickles. Po-Boys can be anywhere from 6 to 12 inches long, depending on the French Bread Loaf.

When you order a Hot Link Po-Boy sandwich the Hot Link will often be sliced open and grilled.

And believe it when they say Hot Link, so spicy you can see red chile pieces in the meat.

I buy a local brand of Hot Link when I'm visiting my Mom and her grandkids in Louisiana. The South knows their Hot Links. I can get them locally here in South Los Angeles, too.

I go the cheap route - for the price of a restaurant or deli Hot Link Po-Boy sandwich, I can get a small package of Hot Links from my local grocer Rouses, and a large loaf of French Bread. Mom always has mayo, mustard, pickles, lettuce, and tomato in the fridge.

Hot Links are made locally with various combined meats (usually pork, chicken, and/or beef) and meat byproducts, spices for flavor, and chile heat. 

The meat is rough in texture, and the sausage casing, or skin, is neon-red in color. They are a little bigger and thicker than a hot dog and mostly come pre-cooked. 

All you need to do is saute or grill the Hot Link for charred flavor. I grilled mine on Mom's outdoor gas grill.  

For your Hot Link Po-Boy build it your way. If you don't have French Bread use any buns or sliced bread. If you like sliced onion then add that, hey, add a slice of cheese. too. A Po-Boy sandwich is a poor person's sandwich, so there are no real rules for a Hot Link Po-Boy.

Ingredients

  • Hot Link Sausage - okay to use any favorite sausage. A Hot Link sausage is usually cooked like a regular hot dog, so you are just heating it up. The meat texture is rough-ground and, of course, spicy.
  • Bread Roll - a Po-Boy sandwich uses a crunchy French-style Bread Roll with a soft inside. They are firmer than the typical soft bun or roll. To make a soft roll crunchy, try grilling the outside until lightly browned. 
  • Lettuce, Tomato, Dill PIckle - sliced.  These are typical Po-Boy toppings.
  • Mayonnaise - a generous smear on the bread. Okay to add mustard or ketchup.

Directions

I start by slicing open a Hot Link. Okay to leave the Hot Link whole.

You can saute or grill the Hot Link sausage. In my video, I cook on an outdoor BBQ gas grill. It's okay to saute Hot Link in a frying pan on a stovetop.

A Hot Link is usually already cooked, so all you are doing is browning the meat and heating it up. It should take 3-5 minutes, depending on the grill's heat.

If your sausage is raw,  grill it until done, then slice it open, if you like. Cooking it will take 5 to 10 minutes, depending on the heat of the grill. 

In the video, I also grill the inside of the bread roll. It takes a minute or two. This is optional if the bread roll is fresh. 

Now it's time to bring it all together. Chop some lettuce and slice the tomato. I use sliced sour dill pickles from the jar. 

Smear mayo on the bread roll.  Add lettuce, tomato, and pickle. Top with grilled Hot Link sausage.
